Golden Carrot

I have a confession to make. I do not particularly gravitate towards vegetables. I grew up on rice and meat with a few sautéed veggies. I thought what if I could combine veggies and art to trick my mind into making them more appealing? Did it work? Well, I don’t eat as much rice anymore and do try to incorporate salads at dinner time. Salads don’t include any frying! I grab my greens, cucumbers, two boiled eggs, some nuts, cranberries, and an Italian dressing. Then it’s time to eat! No meat to defrost unless I want baked chicken.
