Another simple tutorial completed and this is the result.

One issue that I ran into while working on this was the brush wouldn't completely fill the circle - I'd have a circle with about 3% of it blank, like a small segment of it was missing. I fixed this by changing minimum width of the Art Brush. I had to make it very thin, then I scaled the circle so it was large, then changed the minimum width back to it's original amount and the small sliver was gone.

I'm really enjoying playing in Illustrator, it's an deceptively powerful program that makes creating vector art really simple.
