Knobs are great interfaces in real life, because humans have hands that like to grab things to interact with and understand them.
They're not so great as a digital UI elements, "Flat design" or otherwise, because adding the extra layer of interaction (keyboard and mouse or touch screen) defeats the point of a knob in the first place. It's confusing to figure out how to translate a click or a tap to how a knob is supposed to work.
