To proceed (mac):
illustrator: right click > show package contents then Contents / Resources and replace ai_cs6_splash.png or ai_cs6_splash_tryout.png
photoshop:
Download theme park ( I use 3.1 ) to open photoshop / Contents / Resources / Adobe Photoshop CS6.rsrc
Then in PNGf, find SplashBackground.png (ID #414 for me) or SplashExtendedBackground.png (415) and simply drag the png on the preview.

Well if like me, you're afraid of launching photoshop cs6 thanks to those beautiful splash screen, here are some custom I made.
