@Zack - There's a bunch of ways to do this. There's processing libraries that can do it but you need to do a lot of the work. There's also a Scriptographer script for Illustrator CS5 (no CS6 support) that can do this but requires a lot of clicking. Hopefully someone will rewrite it to work in CS6 and newer.

I have an ipad app called Poly that generates similar results, but I don't believe there is vector-based output.
