@Jason Robb it's not really a "pattern" yet, in that it's not repeatable currently. But @Brad linked me to a vector topography map on iStockPhoto that I might end up using if we need to make it repeat.
Other than that, I just built up a few texture layers using some stock paper textures and the Photoshop "Grain" fill effect.
