Ingredients:
1 tsp sugar in the raw
1 ½ tbsp dried basil
1 ½ tbsp Worcestershire sauce
2 tbsp paprika
2 tsp sea salt
2 tbsp smoked tabasco sauce "chipotle"
2 tbsp roasted garlic - important
2 tbsp cumin
3 tbsp liquid smoke
¼ cup chili powder
2 medium white onions
1 large organic zucchini
3 large organic carrots
½ cup chickenstock broth
1 ½ green peppers ( it has to be organic since this is a dirty dozen)
1 15oz can of corn
1 27 oz bushes best chili beans “mild”
2 cans organic diced tomatoes
2 6 oz cans of tomato paste
2 15.5 oz cans of kidney beans rinsed and drained
1 pound 93% lean grass feed ground beef
10 strips of thick cut bacon
8 hot jalapeño SLICES de-seeded and chopped
1 12oz bottle of Leinenkugels “Creamy Dark” beer
Preparation:
1) Puree zucchini and carrots with ½ cup of chickenstock until liquefied – throw in slow cooker
2) Blend onions and green peppers until super small chunks - save
3) Cook thick bacon strips until crispy – drain almost all fat out of pan
4) Cook onions, peppers, and garlic in left over bacon drippings – throw in slow cooker
5) Blend bacon – yes do it! Until tiny bacon bits and throw in slow cooker
6) Cook ground beef until small and crumbly – drain and throw in slow cooker
7) Throw everything else in the slow cooker, mix, and put on “low” for 1-2 days. (well I did mine for 8 hours)
8) Enjoy! Top with cheddar cheese and / or crouto
Congratulations and awesome recipe. I do a lot of BBQ (smoked low & slow) and make a BBQ chili using left over beef or pork and roasted peppers. I got to try the roasted garlic the next time I make it. That would kick butt.
The liquid smoke, the thick cut bacon, roasted garlic, AND the tabasco "chipotle" or smoked makes the smoke flavor that really creates a unique finish.
