Thanks! I think the simplest way to achieve the texture is to add (in Illustrator) texture > grain and push the amount and intensity towards 100. Then rasterize the object, then play around with the settings in 'live trace', specifically the path fitting, minimum area - these should be around 1. I've also achieved some nice results while playing with the threshold.
